A Taste of India

India, undoubtedly, has the largest population of vegetarians of any country in the world and also the widest range and number of vegetarian dishes. The types of dishes and the way in which they are prepared, however, vary significantly from region to region. Wheat breads for example, are part of the daily meal in the North, West and East, but in the South breads are not eaten so rice plays a predominant role in the diet. Because of these regional variations there is no one typical Indian vegetarian meal, although a traditional meal in most parts of the country would consist of a vegetable dish, lentils, chappatis (unleavened bread) and/or rice. On special occasions the meal would include savories and sweet dishes.

Please note that most of the demonstrated dishes will be vegetarian. However, some meat dishes will be prepared in traditional style by our local cooks for those who are not vegetarians. Fresh seasonal vegetables will be used in the preparation of all meals.

Workshop Tutors: Anuradha Ravindranath & Philippa Russell

Anuradha Ravindranath is a professional cook who helped publish her father's cookbook: Tandoor, the Great Indian Barbecue (1996, Penguin Books). Her other interests include collecting pottery.

Philippa Russell has lived with her family in the Kangra Valley in northern India for many years. She has an indepth knowledge of the local area, its people, ways of life and local cooking. Working with the refugee community, she has extensively studied and written about Tibetan and Indian culture.

  • Prices include all Indian Government luxury taxes. If you are a single person booking onto one of our treks or special interest holidays, you do not have to pay a single room supplement. This is only payable if you wish to have a hotel room or a tent (or both) to yourself throughout your tour. The single tent supplement is £40 for the duration of any trek.
  • Top range prices are based on your staying in Government approved 5 and 4 star hotels and Mid range prices are based on your staying in 4 star and 3 star en-suite accommodation.
  • Train travel is in 1st Air-con carriage (fifties style 4 & 6 berth compartments) or the best available.
  • During Christmas and the New Year period, many hotels charge a peak season rate. You also need to be prepared to join in (and pay for locally) any entertainment that may be arranged.
  • The busiest periods for the airlines are Christmas/New Yearand Easter, July and August. If you take your holiday during these periods then please book your tour as early as possible.
  • Our escorted (Delhi to Delhi) special interest/trekking holidays are based on a minimum of 4 people. The maximum number is 16. If the minimum number is not met then your tour will be led by our qualified English speaking guides and tour leaders in India.
